Coconut and Chia Seed Pudding
This delicious coconut and chia seed pudding recipe, developed by my best friend Immy and is incredibly easy and absolutely delicious!

White Chia Seeds:
White Chia Seeds have taken the world by storm as one of the most highly acclaimed superfoods in the health community! Boasting an unusually high content of omega-3 fatty acids, white chia seeds also contain a number of health promoting factors including, a high fibre content, an excellent source of protein and calcium and also uphold high levels of iron, magnesium and zinc.
Oh did I mention there also gluten-free?
Omega-3 fatty acids are considered to be an essential fatty acid (and for good reason!) While the body cannot make them, they are necessary for human health. Omega-3 contributes greatly in helping to reduce inflammation in the body, as well as lowering the risk of many chronic diseases such as, heart disease, arthritis, lower the risks of some cancers and also improve brain development and functionality…it’s easy to see why they are considered essential!

Coconuts are found primarily through the tropical regions of the world. When harvested coconuts are bought and sold in a number of varieties and boast numerous benefits to the body!
Coconuts have been found to contain high concentrations of saturated fats, however while this may seem like a bad thing let me tell you why this isn’t so!
The saturated fats contained in coconut has been said to enhance HDL (the good) cholesterol and reduce the LDL (the bad) cholesterol! Such an effect can lead to an overall reduction in the risk of heart disease.
Coconuts are also loaded with what’s known as Lauric Acid, which contributes greatly in assisting the body fight off nasty bacteria, viruses and fungi!
Did you know that coconuts are the fruit of the coco palm, which can grow up to 30 metres?!

Coconut and White Chia Seed Pudding:
½ a cup of White Chia Seeds
¼ Cup of Coconut Milk
1 teaspoon of Pure Vanilla Extract
1 tablespoon of Honey
½ teaspoon of Himalayan Salt
¼ teaspoon of Cinnamon
1 teaspoon Lime (Optional)
Combine all the ingredients together and mix well, distribute evenly into serving jars and place in the refrigerator for a minimum of two hours.
Serve with fresh fruit and nuts or enjoy as is!
