Spiced Cauliflower

Cauliflower is such a powerhouse ingredient and when roasted it becomes the most amazing side dish that compliments almost any dish!

RECIPE:
INGREDIENTS:

- 1 Whole Cauliflower (cut into florets)
- 3 Tbsp Olive Oil
- 2 Garlic Cloves (minced)
- ½ tsp Sea Salt 
- ¼ tsp Ground Black Pepper

METHOD:

1. Preheat oven to 220ºC and line a large baking tray with parchment paper.
2. Toss cauliflower in a large bowl with oil, salt, pepper and garlic if using.
3. Spread out on the prepared tray. Roast for 20 minutes. Flip cauliflower, roast for a further 5 minutes until you have golden edges and it’s soft all the way through.
4. Serve immediately, sprinkled with parsley (optional).
5. Keep leftovers in an airtight container in the fridge.

COOKING TIPS FROM @thenourishedchef:
1. Feel free to add ½ tsp of ground cumin and ½ tsp of ground coriander seeds for some extra flavour.
